100ml White Wine Vinegar
70g Castor Sugar
1 Birds Eye Chili
2 Red Chilies
Method:
- Add the vinegar and sugar to a pot and bring to the boil
- Allow to reduce to a caramel stage
- Chop/ blitz the chilies and add to the caramel
- Bring to the boil again
- Take off the heat and allow to cool
