225g Plain Flour
112g Cornflour
112g Icing Sugar
225g Unsalted Butter (Softened)
2 Lemons, Zested
Method:
- Sieve; flour, cornflour and icing sugar into a bowl.
- Rub in the butter and lemon zest.
- Mix until a dough is formed.
- Roll into cylinders and wrap in cling film.
- Leave to harden in the fridge to make it easier to slice.
- Bake at 165 degrees/ gas mark 3 for 8-10 minutes.
- Cool, and serve.
